Zucchini Mac & Cheese

Make use of that summer zucchini bounty – simply grate some into our already amazing Mac & Cheese. If you’ve got picky eaters, we suggest peeling the zucchini before grating it, then they won’t even know it’s there!

Ingredients
  • 2 cups bite-sized pasta, your choice

  • 2 medium zucchinis

  • 1 pkg Mac & Cheese Seasoning

  • 13 cup milk, your choice

  • 2 tbsp butter

Instructions
  • In Multipurpose Pot, cook pasta according to package directions. Drain.

  • Meanwhile, coarsely grate zucchini. You should have about 3 cups. Add to Round Steamer. Cover and microwave on high for 4 min. Drain any excess water from steamer.

  • Add cooked pasta to steamer with zucchini. Stir in seasoning, milk, and butter until evenly coated.

Tips

Instead of using Round Steamer, cook grated zucchini in Wok with 1 tbsp oil until softened, about 5 min. To cut down on cooking time, wrap grated zucchini in a kitchen towel and squeeze out excess liquid before cooking.
