Love zucchini and love dipping? Try this 15-minute zucchini ghanoush.

Ingredients

  • 2 zucchini, coarsely chopped
  • 2 tbsp Vegetable Seasoning
  • 14 cup olive oil
  • 1 tbsp lemon juice
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Place zucchini in Rectangular Steamer and sprinkle with seasoning. Microwave for 8 minutes. Drain well.
  2. Place in food processor with remaining ingredients and blend until smooth.
