Zucchini El Greco Pita Pizzas

Ingredients

  • 4 souvlaki-style pitas
  • 1 recipe prepared El Greco Sauce, or sauce of your choice
  • 14 cup kalamata olives, optional
  • 1 small zucchini, thinly sliced
  • 23 cup low-fat shredded mozzarella
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Preheat oven to 350° F (175° C).
  2. Arrange pitas on a Sheet Pan. Spread prepared sauce on each pita. Layer with zucchini slices and olives. Sprinkle evenly with mozzarella.
  3. Bake for 10–15 minutes, until edges start to crisp. Season to taste.
