Zucchini El Greco Pita Pizzas
Ingredients
4 souvlaki-style pitas
1 recipe prepared El Greco Sauce, or sauce of your choice
1⁄4 cup kalamata olives, optional
1 small zucchini, thinly sliced
2⁄3 cup low-fat shredded mozzarella
Sea Salt, to taste
Black Pepper, to taste
Preparation
Preheat oven to 350° F (175° C).
Arrange pitas on a Sheet Pan. Spread prepared sauce on each pita. Layer with zucchini slices and olives. Sprinkle evenly with mozzarella.
Bake for 10–15 minutes, until edges start to crisp. Season to taste.
