Pure comfort: creamy, cheesy, flavourful and fast. Ideal for after-school activities or weekend lunch.
Ingredients
1 large cauliflower, coarsely chopped
1 large onion, diced
1 tsp Minced Garlic
4 cups Nourish Broth , prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
2 cups water
Sea Salt, to taste
Black Pepper, to taste
2 tbsp butter
2 tbsp all-purpose flour
2 tbsp CCB Dip Mix
1 cup cream
1 cup grated low-fat cheddar cheese
Preparation
Simmer first 7 ingredients together until tender in Multipurpose Pot. Drain, reserving broth. Set vegetables aside to cool.
Melt butter over medium-high heat. Stir in flour and CCB Dip Mix, stirring until bubbly.
Add reserved broth, stirring continuously. Add cream, stir and bring to a simmer, stirring frequently, until thickened. Add cheddar and stir until melted.
Mash cauliflower into small pieces. Add to cheese sauce. Bring soup to a simmer and serve.

Tips
