Zippy Cauliflower and Cheese Soup

Pure comfort: creamy, cheesy, flavourful and fast. Ideal for after-school activities or weekend lunch.

Ingredients

  • 1 large cauliflower, coarsely chopped
  • 1 large onion, diced
  • 1 tsp Minced Garlic
  • 4 cups Nourish Broth , prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 2 cups water
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 tbsp CCB Dip Mix
  • 1 cup cream
  • 1 cup grated low-fat cheddar cheese

Preparation

  1. Simmer first 7 ingredients together until tender in Multipurpose Pot. Drain, reserving broth. Set vegetables aside to cool.
  2. Melt butter over medium-high heat. Stir in flour and CCB Dip Mix, stirring until bubbly.
  3. Add reserved broth, stirring continuously. Add cream, stir and bring to a simmer, stirring frequently, until thickened. Add cheddar and stir until melted.
  4. Mash cauliflower into small pieces. Add to cheese sauce. Bring soup to a simmer and serve.
