Zesty Quinoa & Tomato Salad
Quinoa is packed with energy-boosting protein. Make a big batch of quinoa and add to any salad or side dish.
Ingredients
1 cup quinoa, rinsed and drained
2 cups water
2 yellow or red tomatoes, chopped
1 - 2 green onions, sliced – optional
1⁄2 cup Poco Picante Salsa
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
1 tsp lime juice, optional
cilantro, optional
Sea Salt
Black Pepper
Preparation
Combine quinoa and water in Multipurpose Pot - 8 cup. Bring to a boil over medium-high heat.
Reduce heat to medium-low and simmer for 15 minutes, or until water is absorbed. Remove and let stand for 5 minutes.
Add remaining ingredients and mix well. Serve immediately or chill for 30 minutes and serve as a cold salad.
