Zesty Quinoa & Tomato Salad

Quinoa is packed with energy-boosting protein. Make a big batch of quinoa and add to any salad or side dish.

Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 2 yellow or red tomatoes, chopped
  • 1 - 2 green onions, sliced – optional
  • 12 cup Poco Picante Salsa
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional
  • Sea Salt
  • Black Pepper

Preparation

  1. Combine quinoa and water in Multipurpose Pot - 8 cup. Bring to a boil over medium-high heat.
  2. Reduce heat to medium-low and simmer for 15 minutes, or until water is absorbed. Remove and let stand for 5 minutes.
  3. Add remaining ingredients and mix well. Serve immediately or chill for 30 minutes and serve as a cold salad.
