Winter Salad
The perfect in-season salad – orange segments brighten the plate on a cold winter's day.
Ingredients
2 clementines or 1 orange
1 recipe prepared Balsamic Vinaigrette Dressing
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
4 cups baby spinach
2 cups sliced mushrooms
1⁄2 celery root, peeled and julienned, or 2 celery stalks, sliced
1⁄2 cup pepitas (green pumpkin seeds) or sunflower seeds, optional
Preparation
Finely grate 1 tsp peel from clementine and stir into Dressing.
Peel clementines, then separate segments.
Place spinach in a large serving bowl. Add clementine, mushrooms, and celery root. Drizzle with Dressing, then toss to mix. Sprinkle with pepitas and serve.
