The perfect in-season salad – orange segments brighten the plate on a cold winter's day.

Ingredients

  • 2 clementines or 1 orange
  • 1 recipe prepared Balsamic Vinaigrette Dressing
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 4 cups baby spinach
  • 2 cups sliced mushrooms
  • 12 celery root, peeled and julienned, or 2 celery stalks, sliced
  • 12 cup pepitas (green pumpkin seeds) or sunflower seeds, optional

Preparation

  1. Finely grate 1 tsp peel from clementine and stir into Dressing.
  2. Peel clementines, then separate segments.
  3. Place spinach in a large serving bowl. Add clementine, mushrooms, and celery root. Drizzle with Dressing, then toss to mix. Sprinkle with pepitas and serve.
