Wilted Spinach with Tomatoes

Spinach is a great way to boost your Vitamin and mineral intake, and is packed with antioxidants.

Ingredients

  • 1 tbsp olive oil
  • 1 12 lbs (775 g) fresh spinach, trimmed and washed
  • 1 tsp Roasted Garlic Aioli Mix
  • 2 tomatoes, cut in thin wedges
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 tbsp balsamic vinegar

Preparation

  1. Heat a frying pan over medium-high heat. Add olive oil, spinach and Roasted Garlic. Stir well and cook until spinach is wilted and soft.
  2. Remove pan from heat. Stir in tomato wedges, balsamic vinegar, Salt and Pepper. Serve immediately.
