Wilted Spinach with Tomatoes

Spinach is a great way to boost your Vitamin and mineral intake, and is packed with antioxidants.

Ingredients
  • 1 tbsp olive oil

  • 1 12 lbs (775 g) fresh spinach, trimmed and washed

  • 1 tsp Roasted Garlic Aioli Mix

  • 2 tomatoes, cut in thin wedges

  • Sea Salt, to taste

  • Black Pepper, to taste

  • 2 tbsp balsamic vinegar

Instructions
  • Heat a frying pan over medium-high heat. Add olive oil, spinach and Roasted Garlic. Stir well and cook until spinach is wilted and soft.

  • Remove pan from heat. Stir in tomato wedges, balsamic vinegar, Salt and Pepper. Serve immediately.
