Wild Rice with Cranberry and Orange

Elevate your holiday feast with wild rice: packed with fibre, vitamins, antioxidants, and a dash of festive magic. Wild rice, which is actually not a rice at all, but a member of the grass family, is your secret ingredient for a healthy, hearty holiday meal. We’ve added the zing of cranberries, the citrusy punch of orange, and the warm embrace of our Holiday Seasoning, featuring sage and rosemary. A flavourful, nutritious twist to make your celebration truly magical.

Ingredients

  • 1 cup wild rice
  • 5 cups water
  • 14 cup olive oil
  • 13 cup orange juice
  • 1 tbsp Holiday Seasoning or Rosemary Garlic Seasoning
  • 1 tsp mint
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 cup cranberries
  • 12 cup pecan halves
  • 1 orange, zested
  • 4 green onions, thinly sliced

Preparation

  1. Combine wild rice with water in Multipurpose Pot - 8 cup. Bring to a boil, reduce temperature to a gentle simmer for 45 minutes. Check after 30 minutes for tenderness. Drain rice.
  2. In a small bowl, whisk together olive oil, orange juice, seasoning, mint, salt, and pepper.
  3. Add rice, cranberries, pecans, orange zest and sliced green onions. Stir gently to combine and serve hot, cold or at room temperature.
