White Bean Soup (Fassolatha)
Ingredients
2 tbsp olive oil
1 cup medium-diced celery
1 cup medium-diced carrots
2 cans (14 oz /398 ml) white beans, drained and rinsed
1 can (28 oz /796 ml) diced plum tomatoes
4 cups Nourish Broth or Vegetable Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
Sea Salt, to taste
Black Pepper, to taste
Preparation
In a large pot, heat olive oil over medium heat. Add celery and carrots, and sauté for 2–3 minutes to soften.
Add broth and stir in beans and tomatoes.
Simmer gently, to develop flavours, for about 10 minutes. Season to taste.
