White Bean and Zucchini Soup

Ingredients

  • 2 zucchinis, cut into 3" pieces
  • 12 cup prepared Balsamic Vinaigrette Dressing
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 4 cups prepared Nourish Broth or Vegetable Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 2 cans (396 ml/14 oz) white beans
  • 1 cup chopped onions
  • 1 cup chopped celery

Preparation

  1. Turn the zucchini into noodles with a Spiral Slicer. Toss with dressing and set aside.
  2. Combine remaining ingredients in a Multipurpose Steamer.
  3. Microwave with lid on for 8 minutes on high.
  4. Carefully remove from microwave, stir in zucchini noodles, and serve.
  5. Turn zucchini into noodles with a Spiral Slicer. Toss with dressing and set aside.
  6. Place the remaining ingredients in a Multipurpose Pot and bring to a boil.
  7. Reduce to a simmer for 10–12 minutes.
  8. Stir in zucchini noodles and serve.
