Whipped Shortbread

Ingredients
  • 1 lb (450 g) cold butter

  • 1 cup icing sugar

  • 2 tsp vanilla extract

  • 3 cups all-purpose flour

  • 12 cup cornstarch

  • 1 tbsp eggnog spice

  • Royal Icing, optional

  • 2 12 cups icing sugar, sifted

  • 2 large egg whites

Instructions
  • Cream together butter and icing sugar. Add vanilla extract.

  • Add flour, cornstarch and spice, and beat dough until smooth. Chill for 30 minutes.

  • Preheat oven to 350° F (175° C).

  • On a lightly floured surface, roll dough out to 1⁄2” thickness. Cut into desired shapes and place on a Sheet Pan lined with a Sheet Pan Liner.

  • Bake for 10–12 minutes. Do not brown.

  • Store in an airtight container at room temperature.
