Watermelon, Feta and Spinach Salad
Crisp, juicy watermelon paired with creamy, salty feta is a well-known winning combination. What makes this salad better is the hint of lemon & dill, and the delicious tang from the Greek dressing. A delicious ode to summer’s most popular fruit!
Ingredients
1 cup crumbled feta cheese
1 tbsp Lemon Dilly Dip Mix or Creamy Potato Salad Dressing Mix
1⁄4 watermelon, cut into triangles
1⁄2 English cucumber, sliced into rounds
1⁄4 red onion, thinly sliced
1 cup pitted black olives – optional
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
8 cups baby spinach
1⁄2 head radicchio, thinly sliced – optional
1⁄4 - 1⁄3 cup Greek Dressing or Balsamic Vinaigrette Dressing, or your choice
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
Preparation
Toss feta with Lemon Dilly Dip Mix.
In a large bowl, toss watermelon with cucumber, onion, olives, Sea Salt and Pepper. Add spinach and radicchio.
Drizzle with prepared Dressing and toss to mix.
