Warm Winter Niçoise Salad

Ingredients
  • 1 12 lbs (675 g) baby potatoes

  • 12 lb (225 g) fresh or frozen green beans

  • 2 cans (170 g each) tuna

  • 2 tsp Dijon Tarragon Dressing Mix

  • 1 English cucumber

  • 12 cup olives, preferably niçoise

  • 12 cup prepared Dijon Tarragon Dressing

  • 2 tbsp Dijon Tarragon Dressing Mix

  • 12 cup mayonnaise

  • 12 cup plain yogurt

  • 13 cup milk, your choice

  • 1 tbsp Dijon mustard

Instructions
  • Slice any larger potatoes in half; place in Multipurpose Steamer. Cover; microwave on high 4 min. Remove from microwave and stir or toss potatoes. Add Multipurpose Steamer Tray; top with beans. Cover; microwave 4 min. Potatoes should be tender and beans tender-crisp.

  • Drain tuna; place in a bowl. Season with dressing mix and gently break apart into large chunks while mixing.

  • Slice cucumber.

  • To serve, divide warm potatoes, greens beans, tuna, and cucumber between four bowls. Top with olives and eggs, if using, and drizzle with dressing. Serve immediately.

Tips

To make jammy soft-boiled eggs, place eggs in boiling water. Cook 7 min. Drain, cool in ice water, peel, and halve. The yolk should be soft and jammy.
