Ingredients
3 medium potatoes or 600 g baby potatoes, chopped, skin on
1 cup frozen edamame
4 cups baby spinach
2-14 oz cans chickpeas, drained and rinsed
2 cups shredded carrots
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp Balsamic Vinaigrette Dressing Mix
2 tbsp water
2 tbsp tahini
1 tsp Dijon mustard
Preparation
In a Round or Multipurpose Steamer, add potatoes and microwave on high for 4–5 min until tender.
Add edamame and spinach. Cover and microwave on high for 2–3 min.
While veggies are steaming, combine dressing ingredients in a small bowl.
Divide veggie mixture into 4 bowls. Add chickpeas and shredded carrot; drizzle with dressing and serve.
