Ingredients

  • 4 Perfect Portion Baked Bagels, split and toasted
  • vegetable oil, for brushing
  • 1 12 cups Easy Peasy Bagel, Pancake & Waffle Mix, or flour
  • 1 tsp baking powder*
  • 1 pinch Sea Salt, finely ground*
  • 1 cup 2% plain Greek yogurt
  • 1 egg, lightly beaten, optional
  • 6 tsp Everything Bagel Whole Food Topper
  • 4 tsp Roasted Garlic Aioli, prepared, optional
  • 1 tbsp Roasted Garlic Aioli Mix
  • 1 cup light mayonnaise
  • 1 tsp lemon juice, optional
  • 8 lettuce leaves
  • 2 Veggie Burger , prepared patties, cut in halves
  • 12 cup uncooked quinoa
  • 1 12 cups hot water, divided
  • 1 small zucchini
  • 1 pkg Veggie Burger Mix
  • 12 lemon
  • 2 tbsp oil
  • 4 burger buns
  • 14 cup prepared Big Burger Sauce, optional
  • 2 tbsp Big Burger Sauce Mix
  • 1 cup light mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp relish
  • 4 fried or poached eggs

Preparation

  1. Spread bottom halves of bagels with 1 tsp Aioli. Top with lettuce, then burger patties.
  2. Layer with toppings, as desired. Top each with an egg and remaining bagel tops.

Tips

Microwave Poached Eggs: Crack an egg into a Prep Bowl. Cover with water and a drizzle of white vinegar. Loosely place lid on top. Microwave for 60 sec on medium. If egg is not done yet, cover and microwave on medium at intervals of 15 seconds until done as you like. Drain off water.
