Love stuffed peppers but hate the prep? This dish has you covered: it has all the flavour and comfort of a baked dish but without any of the mess. It’s done in way less time in the microwave and you only need to wash one dish—thank you, Epicure Steamers! This is a forkin’ good meal that doesn’t even need a knife to dig in.
Ingredients
3⁄4 cup uncooked white rice, rinsed and drained
1 pkg Tomato Soup Seasoning or Spanish Rice Seasoning
1 can (5.5 oz/156 ml) tomato paste
1 1⁄2 cups water
1 lb (450 g) lean ground turkey or chicken
2 bell peppers
1⁄2 cup grated mozzarella
Preparation
In Round Steamer, add rice, seasoning, tomato paste, and water. Stir to combine. Crumble in turkey. Chop peppers; add to steamer.
Cover; microwave on high 17 min, or until rice is tender and turkey is cooked through. Stir to combine.
Top with cheese. Microwave, uncovered, 30 sec or until cheese is melted. If you have time, let rest 2 min to let the moisture redistribute.
