A restaurant favourite that's easy to make at home. Long noodles symbolize long life - a great good-luck dish for Lunar New Year.
Ingredients
1 pkg (6 oz/170 g) udon noodles, or whole-wheat spaghetti
1⁄2 cup Ultimate Asian Sauce, divided
3 tbsp Red Pepper Jelly
2 tbsp low-sodium soy sauce, or gluten free soy sauce
2 tbsp vegetable oil
2 tbsp rice vinegar
1 tbsp Asian Stir-Fry Seasoning
1 tbsp sugar
1 tbsp sesame oil
1 tsp crushed chilies
8 cups Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
2 carrots, cut into coins
1 celery stalk, thinly sliced
1 bell pepper, thinly sliced
2 cups mushrooms, sliced
2 cups shredded cooked chicken, pork or beef
2 - 3 green onions, sliced — optional
Preparation
In Multipurpose Pot, boil noodles until tender. Drain and toss with 1⁄4 cup Ultimate Asian Sauce. Set aside.
Pour Nourish Broth and remaining Ultimate Asian Sauce into Multipurpose Pot and bring to a boil. Add carrots, celery, pepper and mushrooms. Simmer for 15 minutes, until carrots are tender.
Stir in chicken and green onions. Divide noodles between bowls, then ladle hot soup overtop.
