Twice-baked Stuffed Potatoes

Ingredients

  • 4 baking potatoes
  • 14 cup light sour cream
  • 2 tbsp Herb & Garlic Dip Mix or 3 Onion Dip Mix
  • 1 cup grated low-fat cheddar cheese
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Preheat oven to 425° F
  2. Scrub potatoes and pierce several times with a fork. Place in Multipurpose Steamer and microwave for 5–7 min, until easily pierced with a fork.
  3. Cut potatoes in half lengthwise and carefully scoop out insides, leaving a 1⁄4” thick shell.
  4. Mash potato with sour cream, dip mix, cheese, Sea Salt and Pepper. Spoon back into potato skins.
  5. Arrange stuffed potatoes in an ovenproof baking dish and bake for 15–20 minutes.
