Twice-baked Caesar Potatoes

Ingredients

  • 3 Russet potatoes
  • 2 tbsp butter
  • 14 cup cream
  • 1 tbsp Caesar Dressing Mix
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 12 cups grated Cheddar cheese

Preparation

  1. Preheat oven to 350° F.
  2. Scrub potatoes and pierce several times with a fork. Place in Round Steamer and microwave for 5–7 min, until easily pierced with a fork.
  3. Split potatoes in half lengthwise, scoop out potatoes leaving a 1⁄4" thick shell.
  4. Mash potato with butter, cream, Caesar Dressing Mix. Season to taste with Sea Salt and Pepper. Spoon into potato shells and top each with grated cheese.
  5. Place potatoes on an Sheet Pan lined with Sheet Pan Liner. Bake for 5 minutes or until cheese has melted.
