Risotto gets a bad rap for being a tedious and tricky side dish. We’re here to say, “No more!” All you need are a few ingredients, 20 minutes, and a microwave—no culinary skills required. This mix swaps out traditional Arborio rice for whole grain, tricolour quinoa, packing in extra fibre to keep you fuller for longer.

To make on the stovetop, add Tuscan Herb Risotto Mix and 2 cups hot water to a medium saucepan. Cover; bring to a boil, then reduce the heat to low. Simmer until quinoa is tender, about 30 min. Stir in peas and butter. Let stand, uncovered, for 5 min.
Serve with 4 oz (113 g) lean protein, and 2 cups leafy greens with 1 tbsp Epicure Dressing.
