Tuscan Herb Risotto

Risotto gets a bad rap for being a tedious and tricky side dish. We’re here to say, “No more!” All you need are a few ingredients, 20 minutes, and a microwave—no culinary skills required. This mix swaps out traditional Arborio rice for whole grain, tricolour quinoa, packing in extra fibre to keep you fuller for longer.

Ingredients
  • 1 pkg Tuscan Herb Risotto Mix

  • 2 12 cups hot water

  • 12 cup frozen peas

  • 1 tbsp butter or olive oil

Instructions
  • In Round or Multipurpose Steamer, stir mix with hot water. Cover; microwave on high 17 min, or until tender.

  • Remove from microwave; stir in peas and butter. Cover; let stand 3 min, or until excess liquid is absorbed.

Tips

To make on the stovetop, add Tuscan Herb Risotto Mix and 2 cups hot water to a medium saucepan. Cover; bring to a boil, then reduce the heat to low. Simmer until quinoa is tender, about 30 min. Stir in peas and butter. Let stand, uncovered, for 5 min.
