You’ve made enough soup with leftover holiday turkey to feed your family for an entire year. We’re obviously exaggerating…but here’s another way to use up those leftovers in a more creative way.
Ingredients
2 cups shredded, cooked turkey
1 red pepper, diced
1 green pepper, diced
2 cups grated Monterey Jack or cheddar cheese
2 tsp Fajita Seasoning, or Taco Seasoning
1 pkg 8” flour tortillas
Preparation
Preheat oven to 400 °F (205 °C).
Combine turkey, peppers, cheese and Fajita Seasoning.
Place half the tortillas on a Sheet Pan lined with a Sheet Pan Liner. Divide filling among tortillas. Top each with second tortilla.
Bake 8 minutes, turn over and bake an additional 8 minutes, or until lightly golden and cheese is melted.
