Tuna Casserole Supreme

Ingredients

  • 3 tbsp Guacamole Dip Mix
  • 1 ripe avocado, mashed
  • 1 cup light sour cream
  • 1 tbsp lemon or lime juice
  • 2 cans (4 oz/120g) light tuna
  • 4 cups cooked brown rice
  • 34 cup low-fat marble cheese

Preparation

  1. Preheat oven to 400° F (205 ° C).
  2. Combine first 3 ingredients in a large mixing bowl and mix well. Add remaining ingredients (except cheese) and stir to combine.
  3. Transfer to oven-safe casserole dish and top with cheese. Bake for 30-40 minutes, or until warmed through and cheese is bubbling. Serve warm.
