Tomato Basil Zuppa
Quick and easy to prepare, this soup is great for lunch.

Ingredients
1 tbsp olive oil
1 medium onion, diced
2 tbsp Pesto Sauce Mix
1 can (28 oz/796 ml) diced tomatoes, including juice
1 tsp brown sugar
3 cups Nourish Broth or Vegetable Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
Sea Salt, to taste
Black Pepper, to taste
Instructions
Heat olive oil in Multipurpose Pot over medium-high heat. Sauté onions with Pesto Sauce Mix until softened.
Add diced tomatoes, brown sugar and Bouillon. Bring to a boil, reduce heat and simmer for 10 minutes.
Season with Sea Salt and Black Pepper.
