Time-saver Breakfast Casserole

Often served Christmas morning, this family favourite is an ideal make-ahead recipe for Easter or Mother's Day. Prep the night before and pop it in the oven next morning. Also a great breakfast-for-dinner dish.

Ingredients

  • 16 slices whole-grain or Gluten Free bread
  • 16 slices Canadian back bacon, or 8 large slices ham
  • 16 slices sharp cheddar cheese
  • 6 eggs
  • 3 cups milk
  • 2 tbsp 3 Onion Dip Mix
  • 14 cup diced red pepper
  • 1 tsp dry mustard powder, optional
  • 2 tsp Worcestershire sauce
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 tbsp butter, melted
  • 2 cups crushed cornflakes

Preparation

  1. Generously butter a large casserole dish. Arrange 8 bread slices in bottom (overlapping is fine). Cover with bacon and lay cheddar overtop. Cover with remaining bread slices.
  2. In a bowl, whisk eggs with milk, 3 Onion Dip Mix, red pepper, mustard powder, Worcestershire sauce and generous grindings of Salt and Pepper. Pour over casserole. Cover with plastic and refrigerate overnight.
  3. Preheat oven to 350° F (175° C).
  4. Uncover casserole and drizzle with butter. Sprinkle cornflakes overtop. Bake for 45 minutes to 1 hour, until set. Let stand for 10 minutes, then cut into squares and serve.
