Ingredients

  • 4 pieces Naan bread
  • 12 recipe prepared Thai Stir-Fry
  • 1 pkg Thai Stir-Fry Seasoning
  • 1 can (14 oz/398 ml) coconut milk
  • 12 cup natural peanut butter
  • 1 tbsp soy sauce
  • 12 lime, juiced
  • 2 tbsp oil
  • 1 lb (450 g) boneless, skinless chicken, cut into bite-sized pieces
  • 2 cups each broccoli, bell peppers, and celery
  • chopped peanuts, optional
  • 34 cup shredded mozarella
  • 4 cups baby spinach

Preparation

  1. Preheat oven to 425º F.
  2. Line a Sheet Pan with a Sheet Pan Liner. Arrange naan on top.
  3. Evenly divide and spread Thai Stir-Fry over each naan; sprinkle with cheese.
  4. Bake until edges are crisp and cheese is melted, 10-15 min. Top with spinach.
