Where the taco truck meets the burger joint, that’s my happy place. Everyone can enjoy this mash-up with our vegetarian and allergen-friendly burger mix. Load these up with your choice of taco toppings. It's not just recommended—it’s practically a taco law.
Ingredients
1 cup cubed sweet potatoes
1 pkg Chipotle Veggie Burger Mix
1⁄2 cup boiling water
2 tbsp + 2 tsp oil, divided
4 slices cheddar cheese
8 small tortillas
Preparation
Place sweet potatoes in Rectangular Steamer. Cover; microwave on high 3–4 min, or until fork tender.
In a food processor, combine mix, boiling water, and 2 tbsp oil; pulse to moisten. Add cooked sweet potato and pulse until well combined. Form into 8 balls.
Cut each cheese slice in half. Place one cheese half on each tortilla; top with one ball each. Using your hands, press and flatten each ball until it covers most of the tortilla.
Heat 1⁄2 tsp oil in Sauté Pan over medium-high heat. Working in batches, carefully place two tortillas in pan with the flattened burger mixture facing down. Cook 2–3 min, or until tortilla is warm to the touch on top. Flip tacos; cook 1–2 min, or until the bottoms of the tortillas begin to brown and cheese has melted.
Repeat with remaining oil and tortillas until all tacos are cooked.
