2 cups grated low-fat cheese (Monterey jack or cheddar, or combination)
1⁄2 cup El Dorado Sauce
Preparation
Preheat oven to 350° F (175° C). Arrange 4 tortillas on Sheet Pan lined with Sheet Pan Liner.
Combine peppers, cheese, and El Dorado Sauce.
Divide mixture among tortillas. Cover with another tortilla, and bake for 15–20 minutes, or until cheese is melting and tortillas are beginning to crisp. Cut into wedges.
