Pizza is your answer to using up leftovers. Keep the Tex-Mex theme here—whatever goes in a taco is fair game for pizza! We highly recommend crust-dunking in creamy 3 Onion Dip or spicy Chipotle Aioli.

Ingredients

  • 1 prepared pizza crust (11")
  • 12 cup prepared Marinara Sauce
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 3 tbsp Marinara Sauce Mix
  • 34 cup grated Pepper Jack or mozzarella cheese, divided
  • 34 cup prepared Chicken Barbacoa
  • 1 pkg Chicken Barbacoa Seasoning
  • 12–1 cup water
  • 2 tbsp oil
  • 1 tbsp tomato paste
  • 3 lbs (1.5 kg) boneless, skinless chicken

Preparation

  1. Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
  2. Place pizza crust on pan; spread with sauce and sprinkle 1⁄2 cup cheese over top. Top with chicken, then remaining cheese.
  3. Bake 15 min, or until crust is golden. Add toppings, if desired. Cut into 8 slices.

A pizza crust can be many things—it’s basically a flatbread. Make it with fresh or frozen dough; store-bought, pre-shaped pizza shells; naan bread; matzo; pitas; tortillas; or even English muffins.
