Ingredients
1 tbsp Pesto Sauce Mix
1 tbsp olive oil
4 boneless, skinless chicken breasts
2 tomatoes, diced
1 large zucchini, diced
Sea Salt, to taste
Black Pepper, to taste
Preparation
Mix Pesto Sauce Mix with oil. Place each chicken breast on a sheet of tinfoil. Spread mixture over chicken.
Season tomatoes and zucchini with Salt and Pepper. Divide overtop of each chicken breast. Seal foil packets tightly.
Place on grill and barbecue over medium to medium-low heat for about 20 minutes, until chicken is cooked through. To test for doneness, insert an instant-read thermometer into thickest part of each breast. It should read 165 °F (74 °C).
Place on plates. Pour any juice from packets overtop and serve.
