Take Two Taco Salad

Eating extra-lean ground beef is a great way to cut down on artery-clogging fat.

Ingredients

  • 8 cups chopped Romaine lettuce
  • 1 cup shredded carrots
  • 1 recipe prepared Taco Filling, reheated
  • 1 lb (450 g) lean ground beef
  • 2 tbsp Taco Seasoning
  • 1 cup Poco Picante Salsa, prepared
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional
  • 1 cup low-fat shredded cheese, your choice

Preparation

  1. Place 2 cups Romaine lettuce in 4 bowls. Top with 1⁄4 cup carrots, 1 serving of Taco Filling, 1⁄4 cup Salsa and 2 tbsp cheese. Serve.
