Taco night is a fun, fresh, and laid-back family meal. It’s a great way to introduce new veggies too!
Ingredients
1 - 1 1⁄2 lbs lean ground beef
2 tbsp Taco Seasoning
1⁄2 - 1 cup water
6 - 8 taco shells
3 cups shredded Romaine lettuce
1 1⁄2 cups grated low-fat cheese, your choice
2 tomatoes, chopped
Preparation
In a frying pan, brown beef over medium heat.
In a measuring cup, mix Taco Seasoning with 1⁄2 cup water, and add to pan. Simmer with beef until mixture thickens, approximately 5 minutes.
Spoon filling into taco shells, and top with lettuce, cheese, and tomatoes, or be creative!
