Tahini Sesame Noodles

This quick and filling noodle dish makes a for a great side, or simply serve it with some extra veggies and lean protein for a craveable meal you’ll want to make again and again! Soba noodles are made from buckwheat flour, a gluten-free grain with a high protein content for healthy muscles. Buckwheat is also high in manganese for healthy bones, and B vitamins for energy and metabolism. Make it a complete meal—top your bowl with Rotisserie Chicken!

Ingredients

  • 12 pkg (363 g) soba noodles
  • 3 cups chopped kale
  • 2 tbsp Sesame Ginger Dressing Mix, Maple Miso Marinade Mix or Sesame Noodle Salad Dressing Mix
  • 14 cup tahini
  • 2 tbsp each sesame oil and water
  • 1 tbsp low-sodium soy sauce
  • 4 radishes
  • 12 lime

Preparation

  1. Cook noodles in Multipurpose Pot according to package directions. Add kale to pot for final 1–2 min of cooking. Drain.
  2. Meanwhile, in medium bowl, whisk mix with tahini, sesame oil, water, and soy sauce. Thinly slice radishes and slice lime into wedges.
  3. Toss noodles with prepared dressing. Divide between 4 bowls and top with sliced radish, lime wedges.
