Taco Tostadas
Tostadas use corn tortillas that are lightly toasted or fried. And, instead of being fold up like a taco, they’re served open-faced, with the fillings served on top. It’s still best to eat them with your hands, so don’t get too overzealous piling on the toppings, a messy plate will be inevitable…you’ve been warned!

Ingredients
12 small corn tortillas
1 recipe prepared Taco Filling
1 lb (450 g) lean ground beef
2 tbsp Taco Seasoning
1 cup shredded lettuce
1 cup grated low-fat cheese
1 cup diced tomatoes
Instructions
Heat frying pan over medium heat. Lightly toast tortillas, a few at a time, in the dry pan.
Place warm tortillas on plates and top with Taco filling, lettuce, cheese and tomatoes. Serve immediately.
