Tabbouleh Bowl

Cook once, eat twice: a Middle-Eastern inspired bowl that is a great way to use up falafel leftovers.

Ingredients
  • 1 cup mixed dark greens

  • 12 recipe prepared Tabbouleh

  • 12 cup raisins

  • 2 cups couscous, cooked and cooled

  • 4 green onions, thinly diced

  • 2 red or orange bell peppers, diced

  • 2 English cucumbers, diced

  • 2 tomatoes, diced

  • 1 cup canned chickpeas, drained and rinsed

  • 34 cup Greek Dressing, prepared

  • 2 tbsp Greek Dressing Mix

  • 34 cup olive oil

  • 14 cup red wine vinegar

  • Sea Salt , to taste

  • Black Pepper , to taste

  • Garlic Onion Nutritional Yeast Topper, to taste

  • 3 Falafels, prepared

  • 1 pkg Falafel Mix

  • 12 cup hot water

  • 3 tbsp lemon juice

  • 3 tbsp olive oil

  • 2 tbsp Creamy Garlic Hummus or Tahini Sauce, prepared

  • 1 can (19 oz/540 ml) chickpeas

  • 3 tbsp Creamy Garlic Hummus Dip Mix

  • 3 tbsp lemon juice, about 1 lemon

  • 3 tbsp tahini, optional

  • 1 cup tahini paste

  • 12 cup water, (or more as needed)

  • 14 cup lemon juice

  • 1 - 1 12 tbsp Roasted Garlic Aioli Mix

  • Garlic & Onion Nutritional Yeast Topper, to taste

Instructions
  • Arrange greens and Tabbouleh in a serving bowl.

  • Top with falafels and hummus or tahini and finish with nutritional yeast sprinkle.
