It's like taking a mini-vacation to the Mediterranean with every bite, with herby Greek dressing and a selection of crisp veggies that are superheroes in Mediterranean diets. Do some smart prep ahead of time to whip up a quick, easy, and super healthy lunch when you need it—chop those veggies, mix up that dressing, and cook that couscous. Try serving with Lemony Baked Pita Wedges, and even top with falafels for an extra bump of protein.

Ingredients

  • 12 cup raisins
  • 2 cups couscous, cooked and cooled
  • 4 green onions, thinly diced
  • 2 red or orange bell peppers, diced
  • 2 English cucumbers, diced
  • 2 tomatoes, diced
  • 1 cup canned chickpeas, drained and rinsed
  • 34 cup Greek Dressing or Balsamic Vinaigrette Dressing , prepared
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. In a large bowl, combine all ingredients and enjoy, or chill prior to serving.
