Sylvie's Shrimp and Avocado Boats

Ingredients
  • 2 ripe avocados, mashed (reserve avocado shells)

  • 12 cup light sour cream

  • 1 tbsp lemon juice

  • 3 tbsp Guacamole Dip Mix

  • 1 cup salad shrimp, reserve a few for garnish

  • 2 tsp chives

Instructions
  • Combine avocado, sour cream, lemon juice and dip mix. Refrigerate 1 hour to allow flavours to mellow.

  • Fold shrimp into prepared guacamole.

  • Scoop filling into reserved avocado shells. Garnish with reserved shrimp and a sprinkle of chives.
