Sylvie's Lunchbox Spinach Squares
These healthy, savoury squares make a great addition to any lunch.
Ingredients
1 cup rolled oats
1 cup grated cheddar cheese
1 tbsp Fajita Seasoning, or Souvlaki Seasoning
2 eggs
2 cups chopped cooked spinach
1 container (8 oz/250 g) ricotta cheese or cottage cheese (about 1 cup)
1 cup grated cheddar cheese, divided
2 tbsp Lemon Dilly Dip Mix or Nacho Cheese Dip Mix
1 tbsp 3 Onion Dip Mix
Black Pepper, to taste
Preparation
Preheat oven to 350° F (175° C).
For base, mix oats with cheese and Fajita Seasoning. Scatter over bottom of an 8” baking pan. (Tip: line with parchment paper.)
For filling, beat eggs in a bowl. Mix in spinach, ricotta, 1⁄2 cup cheddar, Lemon Dilly Dip Mix, 3 Onion Dip Mix and Pepper.
Spoon egg and cheese mixture over base, and sprinkle with remaining cheddar. Bake for 35–40 minutes, until set. Let cool, then cut into squares.
