Sylvie’s Cornmeal-crusted Salmon Burgers

A west coast favourite with a delightful cornmeal crunch.

Ingredients

  • 2 cans (7.5 oz/213 g) salmon
  • 2 green onions, chopped, or 3 Onion Dip Mix
  • 1 cup soft breadcrumbs
  • 14 cup milk
  • 2 eggs, lightly beaten
  • 1 tbsp Herb & Garlic Dip Mix or Guacamole Dip Mix, or dip mix of your choice
  • 1 tsp Burger Seasoning or Buffalo Seasoning
  • 1 cup cornmeal
  • 1 tbsp vegetable oil

Preparation

  1. Drain cans of salmon, reserving approximately 2 tbsp liquid. Flake salmon into a large bowl. Add reserved liquid and remaining ingredients, except cornmeal and oil.
  2. Gently mix, then form into patties. Coat patties with cornmeal.
  3. Heat frying pan to medium. Add oil and pan-fry patties for approximately 4 min per side, until crisp and brown on the outside and warmed through.
