Whip up a quick and mess-free dinner—meatballs in the microwave! It’s lightning quick and saves you having to preheat your oven. This is a family-friendly meal that’s packed with peppers and pineapple for that perfect balance of sweetness. Best served over a bed of rice to soak up the sauce.
In a large bowl, combine beef and 2 tbsp seasoning. Mix well. Form into 16 meatballs (about a scant 2 tbsp each).
Arrange in a single layer in Round Steamer or Multipurpose Steamer (it’s OK if they touch).
Chop peppers; add to steamer. Cover; microwave on high 6–8 min, or until cooked.
Meanwhile, prepare sauce: drain pineapple chunks but reserve the juice.
In Sauté Pan, combine remaining seasoning, reserved pineapple juice, soy sauce, and oil. Bring to a boil over medium-high heat, stirring constantly. Reduce heat; simmer until sauce has thickened to your liking.
When meatballs and peppers are cooked, carefully drain and discard liquid from bottom of Steamer. Add meatballs, peppers, and reserved pineapple chunks to pan; stir until meatballs are coated with sauce and pineapple is heated through, about 1–2 min.
