Sweet Banana Muffins

Go bananas for these low sugar, gluten free muffins! Bust out your Muffin Maker on Sunday evenings and become a meal prep pro. These muffins are perfect for on-the-go, healthy breakfasts or packed lunches throughout the week, and they beat takeout muffins by a landslide—those can have upwards of 30 grams of sugar per muffin!

Ingredients

  • 2 ripe medium bananas, peeled
  • 2 eggs
  • 13 cup vegetable oil + more for oiling
  • 1 pkg Sweet Banana Bread & Muffin Mix

Preparation

  1. Using a basting brush, generously oil two Muffin Makers.
  2. In a large bowl, mash bananas; they should measure about 3⁄4 cup. Add eggs and oil; whisk to mix. Stir in mix.
  3. Divide batter evenly into pans filling cavities.
  4. In two batches, microwave on high for 3 min. Rest in pan for 5 min; invert onto wire rack to cool. Or bake in preheated 375°F oven, 15–18 min. Cool in pan 10 min; unmold.
