Summer Pizza Pasta Salad
Here’s a pizza party in a pasta bowl! Whip up a double batch because this fresh take on pizza is ideal for feeding a hungry bunch at summer gatherings and potlucks. The best part? Make it ahead of time and let it chill in the fridge. As the pasta cools, it will soak up all of that pizza-flavoured goodness.
Ingredients
1⁄2 pkg Pizza Dip Hot Dip Mix
3 tbsp olive oil
3 tbsp balsamic or red wine vinegar
2 cups uncooked, bite-size pasta, your choice
4 mini pepperoni sticks, optional
1 green bell pepper
1⁄2 small red onion
2 pints cherry tomatoes
1 cup bocconcini
Preparation
In a large bowl, whisk together dip mix, oil, and vinegar; set aside.
Cook pasta according to package directions. Drain and rinse with cool water to prevent sticking.
Meanwhile, slice pepperoni into rounds, if using. Dice pepper and onion. Slice cherry tomatoes in half. Cut bocconcini into bite-size pieces. Place pepperoni, veggies, and cheese in bowl with dressing.
Add pasta to bowl; toss to mix. Add additional toppings, if desired.
