Summer Citrus Chicken Salad
This recipe is jam-packed with vitamin C, thanks to the red peppers and citrus fruit.
Ingredients
1⁄3 cup light sour cream or low-fat yogurt
2 tbsp Red Pepper Jelly
1 tbsp lemon juice
1 tbsp honey
1⁄4 tsp Curry Seasoning
4 cooked and chopped boneless, skinless chicken breasts
1 cup diced red pepper
1 cup diced celery
1 cup diced pineapple
1 cup chopped orange segments, or canned mandarin orange segments
1⁄4 cup 3 Onion Dip Mix
Preparation
Combine dressing ingredients in a small mixing bowl. Cover and refrigerate.
Combine salad ingredients in a large mixing bowl. Toss with dressing and serve.
