Summer Citrus Chicken Salad

This recipe is jam-packed with vitamin C, thanks to the red peppers and citrus fruit.

Ingredients

  • 13 cup light sour cream or low-fat yogurt
  • 2 tbsp Red Pepper Jelly
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 14 tsp Curry Seasoning
  • 4 cooked and chopped boneless, skinless chicken breasts
  • 1 cup diced red pepper
  • 1 cup diced celery
  • 1 cup diced pineapple
  • 1 cup chopped orange segments, or canned mandarin orange segments
  • 14 cup 3 Onion Dip Mix

Preparation

  1. Combine dressing ingredients in a small mixing bowl. Cover and refrigerate.
  2. Combine salad ingredients in a large mixing bowl. Toss with dressing and serve.
