1 tbsp Vegetable Broth Mix, or broth mix of your choice
2 cans (7.5 oz/213 g each) unsalted salmon
4 cups arugula
2 cups fresh berries, your choice
2 cups broccoli slaw mix
1⁄4 cup prepared Greek Dressing or Balsamic Vinaigrette Dressing
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
Preparation
Peel and cube yam. Place in Multipurpose Steamer. Cover; microwave on high 4 min.
Meanwhile drain and rinse lentils. Drain salmon and break apart chunks using a fork.
Remove steamer from microwave; add lentils and broth mix. Stir to combine. Cover; microwave on high an additional 1–2 min until lentils are heated through and yams are tender.
Once cooked, divide yam mixture between four bowls. Arrange salmon, arugula, berries, and slaw mix in bowls. Drizzle dressing on top; top with additional toppings, if desired.
