Ingredients
  • 1 large yam

  • 1 can (14 oz/398 ml) lentils

  • 1 tbsp Vegetable Broth Mix, or broth mix of your choice

  • 2 cans (7.5 oz/213 g each) unsalted salmon

  • 4 cups arugula

  • 2 cups fresh berries, your choice

  • 2 cups broccoli slaw mix

  • 14 cup prepared Balsamic Vinaigrette Dressing

  • 2 tbsp Balsamic Vinaigrette Dressing Mix

  • 34 cup olive oil

  • 14 cup balsamic vinegar

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • Peel and cube yam. Place in Multipurpose Steamer. Cover; microwave on high 4 min.

  • Meanwhile drain and rinse lentils. Drain salmon and break apart chunks using a fork.

  • Remove steamer from microwave; add lentils and broth mix. Stir to combine. Cover; microwave on high an additional 1–2 min until lentils are heated through and yams are tender.

  • Once cooked, divide yam mixture between four bowls. Arrange salmon, arugula, berries, and slaw mix in bowls. Drizzle dressing on top; top with additional toppings, if desired.
