Not to be too corny but we’re loving this smoky, Tex-Mex twist on classic mac. It’s like a cheesy fiesta in every bite. This mac & cheese boasts 18 grams of protein—serve it alongside a veggie that has a couple of grams of protein for a complete meal, like broccoli or Brussels sprouts.

Ingredients

  • 2 cups macaroni or bite-size pasta, your choice
  • 1 pkg Mexican Street Corn Dip Hot Dip Mix
  • 1 cup corn kernels, fresh, canned, or frozen
  • 1 cup shredded cheddar cheese
  • 13 cup sour cream
  • 14 cup milk, your choice
  • 2 tbsp unsalted butter

Preparation

  1. Cook pasta in a large pot according to package directions. Drain and return to pot.
  2. Stir in dip mix, corn, cheese, sour cream, milk, and butter. Stir until cheese is melted and pasta is evenly coated.
  3. Serve with toppings, if desired.
