Stove-Top Coconut Chicken
Ingredients
2 tbsp vegetable oil
1 lb (450 g) boneless chicken breasts
1 tbsp Madras Curry Powder
1 tbsp Herb & Garlic Dip Mix
1 tbsp 3 Onion Dip Mix
1 cup unsweetened coconut milk
1⁄2 cup Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1⁄2 tsp Cinnamon
Sea Salt, to taste
Black Pepper, to taste
1 pinch unsweetened dried coconut, optional
Preparation
Heat oil in a frying pan over medium heat.
Brown chicken on both sides (about 8 minutes).
Add remaining ingredients and simmer, covered, for 20 minutes.
Sprinkle with coconut, if desired, and serve.
