Ingredients

  • 2 tbsp vegetable oil
  • 1 lb (450 g) boneless chicken breasts
  • 1 tbsp Madras Curry Powder
  • 1 tbsp Herb & Garlic Dip Mix
  • 1 tbsp 3 Onion Dip Mix
  • 1 cup unsweetened coconut milk
  • 12 cup Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 12 tsp Cinnamon
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 pinch unsweetened dried coconut, optional

Preparation

  1. Heat oil in a frying pan over medium heat.
  2. Brown chicken on both sides (about 8 minutes).
  3. Add remaining ingredients and simmer, covered, for 20 minutes.
  4. Sprinkle with coconut, if desired, and serve.
