Stir-fried Beef Curry with Mixed Vegetables

Ingredients

  • 1 lb (450 g) thin strips of sirloin beef
  • 1 tbsp vegetable oil
  • 2 tsp Asian Stir-Fry Seasoning
  • 2 green onions, sliced
  • 1 red bell pepper, thinly sliced
  • 2 tbsp Mango Curry Dip Mix
  • 34 cup Vegetable Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 12 cups frozen mixed vegetables

Preparation

  1. Preheat frying pan or Wok to medium-high. Lightly coat with oil and stir-fry beef with Asian Stir-fry Seasoning for 3–5 minutes.
  2. Remove beef from pan, reduce heat to medium and stir-fry onion and pepper.
  3. Once onion and pepper start to soften, return beef to pan and add Mango Curry Dip Mix. Stir-fry for about 1 minute, until aromatic. Add Bouillon.
  4. Bring to a simmer, add vegetables and cook for 3–5 minutes.
