Ingredients
  • 8 boneless, skinless chicken thighs or 2–3 large chicken breasts, cut into bite-sized pieces

  • 1 pkg Tandoori Chicken Curry Seasoning

  • 1 can (19 oz /540 ml) chickpeas, drained and rinsed

  • 3 cups water

  • 13 cup sliced green olives, optional

  • 13 cup sliced dried apricots, optional

  • 12 pitted prunes or dates, optional

  • zest and juice of 1 lemon

Instructions
  • Place chicken in a Multipurpose Steamer. Cover and microwave on high for 8 minutes, stirring halfway through.

  • In a large measuring cup, dissolve contents of seasoning package in water. Pour over chicken.

  • Add next five ingredients and microwave for 8 minutes.

  • Very carefully remove from microwave and stir.

  • Add lemon zest and juice immediately before serving.
