Steamer Polenta
Steamer polenta is a perfect gluten free, vegan, and guilt free vehicle for countless delicious ideas, savoury, and sweet.
Ingredients
2 cups water or Nourish Broth or Vegetable Broth
2⁄3 cups low-fat milk
1⁄2 tsp salt
1 cup polenta (coarse yellow cornmeal)
1 recipe prepared Pesto Sauce
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
Preparation
Whisk all ingredients together in a Rectangular Steamer.
Place in microwave with lid on, and cook nonstop on high for 6–8 minutes (note: cooking time will vary depending on your microwave).
Remove from microwave and check that polenta is cooked, but a little soft. Serve immediately with your favourite toppings.
